my favourite cold salad for summer Cheap, easy, healthy, and with a good satiety index, green lentil salad is my go-to summer recipe. As some of you may have noticed, I am a big fan of lentils
(I just could eat them every day, miam miam )

I love this salad because it’s really easy and quick to prepare. You can cook your lentils or use tinned ones.

It can be a starter, a side dish, or a main course.

You can pack it in your lunch box or your children’s lunch box.

It’s perfect for a barbecue or a picnic.

The possibilities are unlimited to personalise your green lentil salad according to your taste or the seasonal produce available.

🇬🇷I personally love Greek feta and shallots with plenty of pepper and cucumber.

You can add any sauce or salad dressing, but to me, vinaigrette or a drizzle of olive oil is just enough (no need to mask the taste of this beautiful and succulent green lentil salad)
